Rawson’s Executive Chef, Sanju Singh has cooked for all the big names but he’s now made his culinary home in the leafy suburbs.
Chef Sanju Singh is now the master of Rawson’s fresh seasonal menus and innovative modern dining but long before his 2019 appointment Singh was dishing up his exciting, delicious fare for the world’s rich and famous.
Singh studied at Regency International Centre at TAFE in South Australia and then pursued his career in hotels across Australia and the world. Having worked at high profile establishments such as the Holiday Inn Potts Point, Crown Plaza Dubai, Vibe Rushcutters Bay and Cypress Lakes Resort, he’s proudly cooked for many well-known celebrities.
From Australian Prime Minister John Howard to American Country Royalty, Shania Twain the A-List dossier of Singh’s clients is both long and impressive. Tennis ace Roger Federer, Sheikh Mohmmad of Dubai, Katy Perry and WWE Legend, The Undertaker have all eaten Singh’s dishes.
His celebrity career highlight he however confirms was cooking for Crown Prince Frederic & Princess Mary at the Victor Chan Foundation Dinner. The combination of both true star power and an incredible cause means this is the meal that Singh most proudly recalls.
Whilst Singh is committed to continually producing star-quality food, he laughs at his long list of famous guests and affirms that every restaurant customer is as important as the next.
‘Every plate is as important as the previous one. Whilst my celebrity cheffing days are great dinner party conversation, I’m proud to say all my meals are made with the same passion and attention to detail – famous or not.’
